We all know that nothing smells better than home baked bread but have you ever baked your own? In this hands on workshop you will learn about all the techniques which govern sourdough bread baking in a domestic oven. You will make a variety of different breads and gain the skills and confidence to bake your own bread at home. Come bake bread plus enjoy your handmade pizzas for lunch! Everyone gets to take home bread and some leaven to get started with.

Trainer Bio: Ken Hercott grew up on a wheat farm in the Mallee, Victoria. He started baking at home using flour milled on farm, then took his passion to the US to work under Master baker Richard Bourdon, alongside Chad Robertson. Returning to Austalia, he then worked with John Downes ( the legend of Australian sourdough) at Newrybar and then at the Natural Tucker Bakery. There he honed his skills using a wood fired oven. Ken’s passion for sourdough bread led him to Europe, where he baked and taught at Fattoria Barbialla Nuova, in Tuscany. Check out his facebook page

It was great to get inspired to bake again - but so much to learn! Ken was full of stories and had mountains of experience. It was great to get our hands dirty, kneading and shaping the bread. I've practiced once at home since then and now I have more questions! Anyway I'm sure it takes a while before it all falls into place. Great recipe and enjoying the added extras - pizza dough and muffins. Thanks Ken & Ceres!

There is no doubt that Ken is a leading craftsman in the art of baking. He is also great at communicating his knowledge in easy and well designed steps. And like any high skilled craftsmen, just watching him works will bring a smile to your face. While I gained a wonderful new perspective on baking sour dough bread, I only gave this four stars, because I needed more practice time. Listening and watching someone is helpful but as anyone knows, real skill comes from practice and there is no substitute. Perhaps because I was in a large group (11), we only had one chance to roll our loaf. Everyone failed and Ken rerolled the loaves for us. Obviously, we needed more opportunity for practice. I learnt so many things but hands on practice was quite minimal (we touched the dough 3 times in 7 hours) and I think it is necessary to have smaller group sizes (e.g. 8) so we get more chance to practice and bake multiple products ourselves. There are only 4 stoves at CERES so if each pair had one shelf this might work well.

Wonderfull day, very well organised. Was nourished with beautiful fresh organic produce and ingredients for the bread. Ken was a welth of knowledge making the process for home baking achievable. Tip for the day: buying toppings for pizza lunch at the Ceres grosser.
