Mel will share with you ingredient knowledge, exploring techniques on how to create your old favourites in the new FODMAP friendly way.
Mel’s food for FODMAP Friends focuses on using whole and unprocessed foods to create wholesome meals and snacks with minimum of fuss. These recipes highlight the use of seasonal fruits and vegetables like zucchini, eggplant and spring/summer fruits. The recipes utilise fresh herbs and a selection of spices to add flavour and colour, proving you can have delicious stews, casseroles, tagines, sauces and stir-frys without onion and garlic. These meals and desserts are packed with nutritionally dense vegetables, ensuring that we load our bellies with as many varieties as possible. All the recipes are gluten and dairy free.
Mel will share her own personal tips and tricks with changing to a FODMAP diet. Something that began as major restrictions for her health troubles, has now turned into a long term lifestyle change.
These recipes are not about following a particular trend or diet, they are about supporting beneficial homemade food. This kind of cooking removes the worry of counting preservatives, additives, emulsifiers, thickeners and flavouring enhances. This class highlights that sacrificing all the ‘normal’ foods you once loved, is really a step towards foods that make you feel ‘normal’ again, in one delicious bite at a time!
